This is not an add, but I simply love coconut flake chips from Tiger Copenhagen. They are just the best. The most crunchy, fresh and perfect taste of coconut. I have tried the others, but they are little boring in taste. Have you tried them?
I had lots of overripe pears. So I made a pear smoothie. 🍐 #pearsmoothie
Just pears, oat milk and orange. That’s it. And add a dash of turmeric powder. Simple as that. Delicious.
For topping I chose blackberries & blueberries and coconut flake chips from @flyingtiger
How to make macaroons yourself at home?
Maybe won’t be the most perfect like in the cafe or shop, but I guarantee you - the most delicious 😋. I have never eaten so yummy macaroons and I tell you - I have never been a fan of them.
I have tried to make these pictured above tiramisu macaroons with the second trial. Since I made them the first time, I got hooked. I wanted more. I fell in love. They turn out the most delicious piece of dessert. And it’s homemade. Made by you!
I will say it’s not easy to make them and somewhat time consuming, but worth.
I used the following recipe:
-3 egg whites whisked
- a pinch of salt
- mascarpone cream cheese
- powdered sugar
- instant coffee
On the top I sprinkled cocoa powder

Tuesday - museum day 💛
In Copenhagen in Glyptoteket museum every Tuesday is a free entrance day. Absolutely recommend to visit this unique building that has a green oasis like a botanical garden in the middle of the museum. Also the interior design of the museum is so fascinating, with different colour painted walls that create a nice contrast to the artworks. On contrary to those museums with plain white walls..

Natur Tørst - one of my favourite cafes in Copenhagen . Can definitely recommend it for your next brunch spot. It’s not only a very instagrammable place, but also has a very delicious food and a great variety choice of healthy exotic juices like ‘Camu Camu’, ‘Moringa’ . The exotic fruits that you have maybe never heard about and you will google them. It also got awarded as the most sustainable cafe in 2018.
And the wall behind is with natural plants! 🌱

Avocado is a superfood as it offers a range of health benefits. They’re high in protein and potassium, and a great source of fiber and healthy fat.
A smoothie a day keeps the doctor away. So in summer I start every morning with fresh pressed smoothie , if I have no time to make a smoothiebowl.
This time I went for pineapple smoothie, which I actually had been drinking a lot lately. In this one I had fresh pineapple, fresh mint, lemon juice and water. So tropical and fresh.
Pineapple smoothie is very good for your skin and rich in antioxidants and C vitamin. It is actually rich in calories , so it is good for your breakfast.
It also helps during menstruation, to relax the muscles and thus easing menstruation pain and cramps. For me it worked. Usually I have a very painful periods that I even can’t get out of bed. This time by drinking pineapple juice, I didn’t have almost any pain. Happy that I finally found a healthy remedy and can do without those harmful pills.
#chocosmoothie of the day 🍫 who doesn’t like chocolate? For this Choco smoothie I was a bit experimenting by adding pineapple to the cacao flavour. It turned out quite interesting, but some might not like it. 🤔
Topped with fresh pineapple pieces, chia seeds, peanut butter and chocolate chips.
Healthy salad for lunch 🥗
It’s easy and super light . I used:
•Lactose free cottage cheese
•splash of lemon juice
Start the day with a fresh pressed pineapple juice 🍍
Cut a fresh pineapple and blend it in the blender. Add a splash of water.
The health benefits of drinking pineapple juice:
•rich in antioxidants
•aids the weight loss
•helps with digestion problems (one of my key issues)
•boosts immune system
•boosts your serotine levels
•can improve bone and joint health
Eating pineapple regularly could make your body and brain feel good. Pineapple is high in the amino acid tryptophan. This amino acid is used to make one of our most important mood-boosting neurotransmitters: serotonin.
It’s also mega rich in vitamin C 🌟
Homemade Chocolate chip cookies . 🍪
This is what you need:
•Brown farin sugar 300g
•Normal sugar 100g
•Melted butter 250g
•chocolate chips (I used both milk and dark chocolate, and you need to use a lot)
Up to your preference you can also add oats, cocoa powder or anything else that you want. Be free, experiment and improvise.
Mix the first together sugar, then slowly add melted butter and eggs . After add baking powder and flour. Mix it all and lastly add chocolate chips.
Make a small balls of the mixture and put with a decent distance on the plate. Try to make them small and with distance in between to ensure that they don’t get melted together or too big.
Put them in preheated oven at 180C and bake them for about 15mins.
A perfect combo after an energizing yoga class. A refreshing and peaceful view, healthy and nutritious meal and a good book.
Can absolutely recommend this book by Richard J. Davidson- world’s leading neuroscientist. In short it is a brief introduction & more in the neuroscience and will help you to understand better your life and brain. It will change the way you see yourself and other people you know. It is a must-read for everyone who is interested in changing their lives in a positive way.
For someone who is sweet-tooth and loves some frenchy eclairs, I can only recommend Queen’s Delight eclair cafe in Copenhagen. So delicious, exquisite flavours and not too sweet or cream fat as other places. Also they are in reasonable prices- 35dkk for an eclair. What not to love?

Hello 🤗 Smoothie of the Day - The Green Garden #greensmoothie with matcha 🍵 💚
Now it’s summer and the best time to eat all the berries - especially local strawberries 🍓 that are my favourite summer fruit.
Topped with fresh strawberries and cherries and chia seeds
*Super easy and healthy veggan (with eggs) banana Choco brownie 🤎 *
So delicious soft sponge brownie. Super easy to make , healthy and yummy 😋
Gluten and lactose free. Zero sugar and fats.
It takes literally 5mins to make.
All you need is basically these ingredients :
•2-3 very ripe bananas
•a teaspoon of baking powder
•a teaspoon of baking soda powder
•3-4 big spoons of cocoa powder
•2 tbsp of peanut butter
•a teaspoon of coconut oil
•chunks of dark or milk chocolate
• chips of dark or milk chocolate for topping
The picture displays only a part of all ingredients 🤦♀️ so follow the list 😊. Put all in blender and mix well. Mix also the chunks of chocolate (add in the very end, so they don’t get in too small pieces).
When everything is blended, fill into the baking form (make sure you grease it with coconut oil before) and add chocolate chips on the top.
Put in the preheated oven 200* and let it coook for about 15-20mins. Serve when ready.
