    today was a manic day if there ever was one

    i am a Terrible baker. and not because what i bake isnt good (not to toot my own horn but i think my stuff is pretty damn good most of the time, aside from a few times i have royally fucked up), but because i think i eat more than what ends up in the final product 🧍‍♂️

    #i was just chopping apples for an apple pie and i ate the pieces i cut off #and like the other day. i was making cupcakes and bro i ate frosting whenever it got on my hands #or like when i got the frozen ghost cookies. i ate more of those raw than i did when they were cooked #oops #i mean im the one baking it so i deserve it <3 #no wonder i tend to feel sick after baking 🚶‍♂️ #also because i am very stupid #i just forgot to leave the pie crusts out so now im having to wait for it to warm up while my apples are already ready to go 🧍‍♂️ #and dude #i made cookies for my friends birthday and gave them to her at lunch on friday #and like she ate them then and she let our other friends at our table have some and they all liked them #gave me an ego boost i didnt need <3 GSHDBDBFN #ash has no braincells #ash struggle tweets

    Cheesy week: week of 9/13/21

    Junior’s cheesecake

    Grade: A-

    Too little crust, too much filling. The edges browned like Basque cheesecake because I didn’t want to put cake strips on (partly due to laziness, partly because I had a hard stop for dinner and was worried cake strips would cause underbaking).

    Next time, might experiment with cheese filling, and definitely need to double the sponge base (which was a bit dense and need to improve regardless).

    Recipe: the original New York cheesecake recipe from Junior’s from the Spruce Eats

    Hokkaido mascarpone cheese tarts

    Grade: B+

    The consistency of the filling is too runny, I think, but it tastes okay. I actually didn’t get the sample the finished product.

    Recipe: Hokkaido cheese tarts from El Mundo Eats

    Hong Kong egg tarts

    Grade: A-

    Filling wasn’t well-mixed (bits of eggs in some tarts, and runny filling in others) but still delicious!


    Pastry from sourdough pie crust from Baking Sense (pork lard for some of the shortening; mostly butter)

    Filling from Hong Kong egg tarts from the Woks of Life (cold instead of hot water)

    Cinnamon sugar pie crust cookies

    Grade: A-

    Tastes pretty good, even though the shaping is a mess. Broke some all over my kitchen floor.

    𝔰𝔭𝔦𝔠𝔢𝔡 𝔱𝔬𝔪𝔞𝔱𝔬 𝔞𝔫𝔡 𝔤𝔞𝔯𝔩𝔦𝔠 𝔰𝔬𝔲𝔭

    note: this recipe also contains instructions for garlic vegan cheese bread - totally optional

    this recipe serves: 2


    for the soup:

    1 tbsp of vegan butter
    1 tsp of honey (or whatever sweetener you're into)
    1/2 an onion
    a handful of fresh cherry tomatoes
    a can of chopped tomatoes
    1/2 a carton of soya single cream
    the odd dash of of soya milk
    1 whole bulb of garlic
    a vegetable stock pot/cube
    1/2 tsp of miso
    1 tsp of liquid smoke
    1 tsp of dried basil
    1 tsp of paprika
    1 tbsp of onion powder
    1/2 tsp of chilli flakes
    1/2 tsp of grated nutmeg
    1/2 tsp of oregano
    a sprig of fresh rosemary
    salt and pepper to taste
    a bay leaf
    1 tsp of parsley
    1 tbsp of garlic powder

    for the optional bread:

    4 slices of bread (up to you what you choose! I used baguette)
    vegan cheese to cover the bread - I used honestly tasty's sham
    4 tsp of vegan butter
    4 cloves of garlic
    a sprig of rosemary
    salt and pepper to taste


    for the soup

    on a lined baking tray add your tomatoes, garlic and rosemary - drizzle this with oil and place into the oven on 100C

    while that's happening, dice your onions, fry on medium heat with honey and butter

    once translucent - add to a blender, along with your cream, chopped tomatoes, all of your seasoning (apart from the bay leaf)

    once cooked - add your tomatoes and garlic, blend until smooth - adding soya milk if needed (if you don't have a blender no worries just mash it up if you wanna)

    now pour this out into a sauce pan and heat on low to allow it to thicken and mingle - this is where you add the bay leaf ;)

    serve when piping hot and store in a liquid safe container once completely cooled

    for the optional bread:

    on the same baking tray throw on more garlic & roast

    while it's roasting, grate/cut your cheese for the bread and mince your rosemary

    once roasted, your garlic should be soft enough to simply spread across your bread - do this then add your butter, salt and pepper, rosemary and finally cheese

    pop it in the oven to do good things on grill/high heat
