Ahhh…the smell of bread baking is a call to taste test any time of day. The garlic really makes the flavor pop as does the occasional bite of green olive as you’re enjoying this warm, fragrant treat. It’s great the first day right out of the oven…the next day too if there’s any left.
2 c. whole wheat flour
1 t. salt
2 t. yeast
1 t. garlic powder
¾ c. lukewarm water
2 T. + olive oil
3/4 c. stuffed green olives, chopped with liquid
Option: ¼ c. pine nuts on top
In large mixing bowl, add flour, salt, yeast, and garlic powder stirring with a whisk to mix dry ingredients well. Add water and oil stirring well, then work in olives. Brush oil all over the outside of the dough ball. Let sit for 2 hrs. covered with a kitchen towel in a warmish spot in your kitchen for the yeast to do it’s thing and make the dough rise. Preheat the oven to 400 degrees. Transfer the dough to a glass pie pan or other flatish baking dish spreading the dough to touch the sides of the dish. If you’re adding pine nuts, do it now gently pressing them into the top of the bread dough. Bake for 20 min. until bread sounds hollow when tapped briskly. Cut into narrow wedges serving hot or it’s great the next day with poached eggs and tomato slices.

Never tried quinoa in a soup so I went for it adding in my favorite vegetables, a few seasonings and came up with easily my latest favorite soup. See what you think…
6 - 7 c. vegetable broth
1 c. tri-color quinoa
oil
2 lg. leeks, sliced into rings
2 c. parsnips, coarsely grated
2 c. carrots, sliced thin into coins
4 - 5 stalks celery, sliced
1 t. salt
1 t. black pepper
1 t. garlic powder
Option: Ribbon cut kale if you’ve a mind to - 1 c.
In a large soup pot, add vegetable broth and quinoa. Cover and bring to a boil, then turn down to simmer cooking quinoa - approx. 15 min. In a large fry pan, in olive oil saute leeks, parsnips, carrots, and celery until just tender. Add vegetables, salt, pepper, and garlic powder to quinoa mixing well. Simmer another 15 min. to blend flavors and serve in deep soup bowls - mmmmmm.
