Halloumi and pepper skewers with chilli mayo and salad.
Perfect light dinner for a summers evening. Serves 2. 650cals per serving.
1 packet of halloumi
1 tbsp central American spice mix
1 Bell pepper
1 medium tomato
1 baby gem lettuce
1 tbsp mayonnaise
1 tbsp sweet chilli sauce
1 tbsp honey
1 tbsp olive oil.
Step 1- soak the skewers in a bowl of water to stop them burning your aiming for 2 skewers per person. Chop the halloumi into medium sized chunks, pop into a bowl of water. Trim and de seed the pepper and slice into medium sized chunks. Chop the tomato into medium sized wedges. Trim the root off the lettuce and Chop into medium sized slices.
Step 2- remove the halloumi from the water and pat dry with a towel. Pop them into a bowl with pepper chunks,lemon juice from half the lemon, a sprinkle of pepper , drizzle of oil and the central American spice mix. Give it all a stir so the mixture has coated the halloumi and pepper. Then thread the halloumi and pepper onto your skewers, alternate between halloumi and pepper. Pop on a baking tray.
Step 3- bake in the oven till the halloumi has started to turn brown and the pepper is tender. Meanwhile combine the mayo and sweet chilli . In another bowl put the lettuce and tomato, squeeze over the other half of the lemon , oil, a sprinkle of pepper and a pinch of sugar. Mix well to coat.
Step 4- once the skewers are out, cover them with the honey , share between plates the skewers and salad. Drizzle the chilli mayo over the skewers and enjoy.
