Today I have made for you , a new soup to me, Thai coconut Lemongrass Chicken soup! I attempted this soup from scratch with no recipe. The story behind this soup is that it screams comfort to me. This soup was a go-to at a local 24 hour Thai restaurant near me at all hours of the night and especially when sick.
This soup tastes amazingly light, smooth and just the right amount of heat . It comprises of notes of coconut , tomato ,lemongrass and lime. I would describe it as broth like packed with vegetables chicken chunks and flavour bursts.
Today , my family were my taste testers . I also tasted the soup and loved it ! Some comments and notes from the tasters were that it needed more chicken pieces and more spice and heat flavours like chili paste maybe ? Personally, I think I could of added more chili and maybe a little less coconut milk because it mellows out the flavours in the soup.
My takeaways :
I had some difficulty gaging my cooking temperatures because of the chicken inside the soup. This soup is a slow cooker for sure. It has to be at a simmer so that all the flavours like the lemongrass and the milk can be infused with the tomato. I slow simmered it for about an hour and a half to assure that the chicken would not be rubbery and tough. Patience is a virtue. This might be the one thing i do differently. By adding the chicken later on in the cooking process maybe the chicken will be more tender and shreddable. Id add a smidge more chili and fresh basil instead of dried. I hope you like this very simple and easy recipe. :) Tell me how it goes and what your favourite comfort soup is ...! ( Recipe follows)
-Garlic 2 cloves
- Onion 1/2
-Ground ginger 3tsp
-Leeks 1 stalk
-Thyme 2 sprigs
-Olive Oil 10ml
- Lemongrass - handful , dried and tied with twine
-Chicken Breast 1, medium sized
-Broth 1.5L Chicken and vegetable
-Coconut Milk 1 can
- Basil fresh, 3 leaves (thai preferred)
-Soy sauce 1 tbsp
-Sri Racha Sauce 2 tbsp
- Cocktail Tomatoes quartered
-Carrot 1 ,diced
-Celery 1 stalk
-Salt and pepper to taste
1. Sautee and sweat aromatics ( garlic , onions ,leeks and ground ginger)
2. After 10 minutes , add chicken breast sliced and tomatoes ,mix and cook on medium for 5-7 minutes.
3. Add Broth and lemongrass and bring to a boil.
4. Reduce heat and simmer for an hour.
5. In the last half hour , slowly add a coconut milk, basil ,spices and herbs.
6.Simmer for half an hour more ,casually stirring.
7. Soup is done when chicken is cooked through and tender.

Chicken Breast with Ginger and Lemongrass
Ever since Ed and I travelled to Vietnam and Cambodia several years ago, I have been trying to prepare some Vietnamese/Cambodian specialties.
I’ve cooked Pho many times (it’s one of my favorite soups) but mostly have made lots of recipes using lemongrass and fresh ginger, which are ubiquitous in Southeast Asian cuisine.
The combination of these two ingredients, (which are easy to find these days), is refreshing, vibrant, citrusy, and they give a real boost of flavor, especially to mild foods such as chicken. Just a few teaspoons of seasoning makes a plain old chicken dinner really easy and yet so interesting and definitely not plain old.
ROAST CHICKEN BREAST WITH LEMONGRASS AND GINGER
2 whole chicken breasts (or use 4-6 whole legs)
1 tablespoon vegetable oil
2 large cloves garlic, finely chopped
2 teaspoons chopped fresh lemongrass
2 teaspoons chopped fresh ginger
2 teaspoons chopped fresh chives (or green scallion tops)
salt and freshly ground black pepper to taste
sprinkle of cayenne pepper
1/4 cup white wine
Preheat the oven to 450 degrees. Place the chicken breasts in a roasting pan. Brush the chicken with the vegetable oil. Scatter the garlic, lemongrass, ginger and chives over the chicken and sprinkle with salt, pepper and cayenne pepper. Roast for 10 minutes. Lower the oven heat to 350 degrees. Roast for another 40-45 minutes or until cooked through (a meat thermometer inserted into the thickest part of the breast will register 160 degrees), basting once or twice with the white wine. Let rest for 15 minutes before carving.
Makes 4-6 servings

didnt want to eat a big dinner so i made oatmeal (w walnuts, brown sugar, a nectarine from my tree outside) and sleepytime vanilla tea and i am so happy and sleepy. truly its little things
