    Pretzel Chicken Bites 🥨🙌🏻


    1. 1 cup of flour

    2. ½ tsp salt

    3. ½ tsp pepper

    4. 1 tsp mustard powder

    5. 1 cup oat milk

    6. 1/3 applesauce

    7. 5 cups of Snyder’s snap pretzels (that’s the brand I used but any type of pretzels would work great!)


    1. Put Snyder’s snap pretzels in a plastic bag and zip it shut. Take a rolling pin and roll over the pretzels until they are all crushed and small enough to act as bread crumbs. You don’t want complete powder-just small pieces. Pour into a large bowl and set aside.

    2. In another large bowl, combine flour, salt, pepper, and mustard powder. Set aside.

    3. In a smaller bowl, combine the oat milk and applesauce. Set aside.

    4. Cut up 2 lbs of chicken breast into 1 inch pieces.

    5. Toss the chicken pieces in the flour mixture then oat milk mixture and finally the pretzel bowl. Press the pretzels crumbs on the chicken.

    6. When they are all finished put the bites in the air fryer on 375 for about 15 minutes you might have to do a couple of batches depending on the size of your air fryer. Make sure you spray the air fryer basket and the chicken bites with oil before cooking.

    Strawberry Rhubarb Pie 🥧 🍓



    1. 2 ½ cups of flour

    2. 1 tsp of salt

    3. 1 tsp of sugar

    4. 1 cup of margarine

    5. ½ cup cold water


    1. ¼ cup dark brown sugar

    2. ½ cup sugar

    3. 1 and ½ tbs vanilla extract

    4. Juice of 2 lemons

    5. 2 tbs margarine

    6. 4 cups of strawberries that are cut into fourths

    7. 3 cup of sliced rhubarb

    8. 4 tbs of corn starch


    1. Preheat the oven to 375 degrees. Combine flour, salt, sugar, margarine, and cold water in a large mixing bowl.

    2. Knead dough on a floured surface until smooth and cut into two equal balls. Put in the fridge while preparing the filling.

    3. In a large mixing bowl, combine brown sugar, sugar, vanilla, lemon juice, margarine, and corn starch. Set aside.

    4. Cut strawberries into fourths and cut rhubarb into small slices. Put the prepared strawberries and the rhubarb into the mixing bowl with the sugar. Stir to combine evenly.

    5. Take out the two dough balls from the fridge. Roll them out until ¼ inch thick. Place one onto the bottom of pie plate. Flatten out and trim off excess on top.

    6. Pour the filling into the pie plate and smooth out with a spoon. Place the other dough layer on top. Roll the edges of the dough inward to create a crust. Pinch the top dough with the bottom to create a seal.

    7. Make four air holes in the top of the pie.

    8. Bake at 375 for 45 minutes or until the crust is browned.

    Garden Vegetable Wontons 🥡 these are great and you can use ground chicken, turkey, beef, or pork!


    1. 1 pound ground beef

    2. 1 tbs soy sauce

    3. 1 cup of sweet peas

    4. 1 tsp of onion powder

    5. 1 tbs minced garlic

    6. Juice of 1 lime

    7. 1 tbs of apple cider vinegar

    8. 1 tbs corn starch

    9. 1 tbs sugar

    10. 2 tbs of canola oil

    11. 1 package of “Nasoya vegan wonton wraps”


    1. In a large frying pan, cook 1 pound of ground beef with sugar, corn starch, apple cider vinegar, lime juice, minced garlic, onion powder, peas, and soy sauce.

    2. Once the beef fully cooked set aside. In another large frying pan, heat up the 2 tbs of canola oil.

    3. On a lightly floured surface, lay out the wonton wrappers. Take two wrappers on top of each other. Put a tbs of the beef mixture in the center of the wrapper. Coat the wrapper wrapper with some water and then pinch all the corners into the center to form an envelope. Do this until you have no wrappers left.

    4. Place the envelopes into the oil and tell them fry in batches. When the bottoms of the wontons are browned flip to cook the top a little they should hold together. Do this until all the wontons are done.

    5. Enjoy and serve with some sweet and sour sauce!

    Monkey bread 😊



    1. ½ warm water

    2. 1 cup of oat milk

    3. 2 tbs of salted earth balance margarine

    4. 4 cups of all purpose flour

    5. ¼ cup of sugar

    6. 1 tbs of vanilla extract

    7. 1 yeast packet

    Topping sugar-

    1. 1 cup of dark brown sugar

    2. 2 tbs of cinnamon

    Caramel sauce-

    1. ½ cup of margarine

    2. ½ cup of dark brown sugar

    3. ½ of monk fruit sweetener sugar

    4. 1 tsp of vanilla extract


    1. In a small bowl, combine ½ cup of warm water, yeast packet, and 1 tsp of sugar. Let sit for 5 minutes or until froamy.

    2. In a large mixing bowl, combine flour, sugar, margarine, vanilla, and oat milk.

    3. Knead until elastic on the counter in 1/3 cup of flour.

    4. Then cover the dough for 1 and a half-2 hours until to doubles in size.

    5. Roll out to 1 inch thickness and cut vertically and horizontally for 1 inch inch pieces that you will roll up into a ball.

    6. Form into balls and then let it rise again for 1 hour.

    7. Make the caramel sauce. In a small sauce pan heat butter, brown sugar, vanilla extract, and monk fruit sugar. Stir often and wait for sugar to be dissolved. About 3 minutes. Set aside.

    8. In a small bowl whisk together dark brown sugar and cinnamon. This is our topping sugar. Set aside.

    9. In a large bowl, pour ¼ melted margarine over the dough balls, toss them so they are covered in margarine and pour the topping sugar mixture over. Toss the balls into it until they are fully covered.

    10. Grease a Bundt cake pan with canola oil. Pour half the caramel sauce on the bottom of the pan. Arrange the dough balls in the pan evenly. Pour the remaining caramel sauce on top. Cover with plastic wrap and let rise for 45 minutes up to an hour. The dough should double in size.

    11. Preheat the oven to 350 degrees.

    12. After the dough has risen for 45 minutes, take off the plastic wrap and bake in the oven for 40 minutes.

    13. Cool for 5 minutes and then get it out of the pan.

    14. Let cool and then enjoy!

    Honey Pot Chicken 🍯


    1. 2 lbs of chicken

    2. ½ tsp salt

    3. ½ tsp pepper

    4. 3 tbs of margarine

    5. 1/3 cup flour

    6. 2 tbs of apple cider vinegar

    7. 1/3 cup of honey

    8. 1 tbs of minced fresh garlic

    9. 1 tbs of powdered garlic

    10. 1 tsp of onion powder


    1. Heat up a large skillet over medium heat with 3 tbs of margarine.

    2. Add the chicken breast.

    3. In a small mixing bowl add the salt, pepper, onion powder, garlic, honey, apple cider vinegar, and flour. Stir until the flour is combined.

    4. Pour the liquid mixture into the pan. Let it cook along with the chicken until that chicken is browned and fully cooked.

    Herb garden chicken and potatoes 🥔



    1. 3 tbs of olive oil

    2. 3 tsp of garlic

    3. 1 tbs of Italian seasoning

    4. ¼ cup of Marsala wine

    5. ½ tsp salt

    6. ½ pepper

    7. ½ tsp of thyme

    8. Zest of 1 lemon

    9. Cut the chicken into 1 inch pieces

    10. Package of thin cut chicken breast


    1. Cut up the chicken breast into 1 inch pieces.

    2. In a large frying pan, cook the chicken pieces in 2-3 tbs of olive oil.

    3. Add the garlic, thyme, lemon zest, salt, pepper, Marsala wine, and Italian seasoning. Let the chicken brown.

    4. Enjoy!

    Potatoes 👇🏻


    1. 3 tbs olive oil

    2. 1 tbs of minced garlic

    3. 1tsp of salt

    4. ½ tsp of pepper

    5. 1 tsp of fresh thyme

    6. ½ tsp of fresh oregano or Italian seasoning


    1. Preheat the oven to 400 degrees. Clean and scrub 5 medium potatoes in the sink.

    2. Then cut them up into thin and flat rounds. They cook so well when cut this way!

    3. In a large mixing bowl, combine the oregano/Italian seasoning, thyme, salt, pepper, garlic, and olive oil.

    4. Add the potato slices into the mixing bowl and toss them in the mixture until every slice is coated.

    5. Pour the potatoes on a oiled baking sheet. Pour any excess oil and herbs over the top of the potatoes.

    6. Cook them in the oven for 35 minutes or until browned and fork tender. They should be the texture of French Fries 🍟.

    Honey Galic Salmon🍯


    1. 2 tbs honey

    2. 1 tsp garlic powder

    3. 1 tsp of lemon juice

    4. Pinch of salt and pepper

    5. 1 tsp of fresh dill

    6. 1 tbs of mustard powder

    7. Salmon fillets


    1. In a small mixing bowl, combine honey, garlic, lemon juice, salt pepper, dill, and mustard powder.

    2. Preheat the oven to 400 degrees.

    3. Put salmon in the baking dish.

    4. Brush the seasoning mixture on the salmon fillets.

    5. Bake for 35 minutes or until browned.

    6. Enjoy!

  • Peach Hand Pies :)


    1. 8 peaches 

    2. ¼ cup of brown sugar

    3. ¼ cup of sugar

    4. ½ tsp of cinnamon 

    5. 1 tsp lemon juice

    6. 3 tbs corn starch 

    7. ½ cup of powdered sugar 

    8.  2 tbs of oat milk

    9. 2 ½ all purpose flour 

    10. ½ cup of sugar  

    11. 1 cup of margarine 

    12. ½ cup of cold water



    1. In a large mixing bowl, mix together 2 ½ cup of flour, 1 tsp of salt, and 1 tsp of sugar.

    2.Mix in the 1 cup of margarine and ½ cup of cold water. Combine until a dough is formed. Then, sprinkle some flour on a clean surface and kneed the dough until smooth and elastic. Roll out until it is about 1/8 inch thick. Use a large circle cookie cutter and stamp out as many circles as you can. You can keep rolling the dough back up and then flat to get the most use out of the dough. Set aside the circles.


    1. In a large mixing bowl, combine ¼ cup of brown sugar, ½ tsp cinnamon, ¼ cup of sugar, 1 tsp of lemon juice, 1 tsp of vanilla extract, and 3 tbs of corm starch. Whisk together. Set aside.

    2. Cut up the 8 peaches and put in a food processor or blender to smooth it out a little. Don’t blend for too long, a couple of seconds is perfect!

    3. Pour the peaches into the sugar mixture and combine.

    Assembling the hand pies-

    1. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper. Set aside. 

    2. Line up your circles and fill them with about 1 or 2 tablespoons in each. Fold over the dough to close the pocket in a half moon shape. Pinch the ends and pleat with a fork across the seal. Repeat for all the hand pies.

    3. Make  2-3 of holes on top of the hand pie with a fork or knife. 

    4. Place them on the baking sheets 1-2 inches apart. 

    5. Bake for 40-45 minutes until lightly browned. 

    6. Remove from oven and let cool.

    7. Make the glaze in a small bowl. Combine ½ cup of powdered sugar, 2 tbs of oat milk. It should be a slightly runny texture.

    8. Brush the glaze over the hand pies and sprinkle with some sugar.

  • Lemon arugula pasta! Great for summer and super easy :)


    1. 2 tbs earth balance margarine

    2. 1 tbs of minced garlic

    3. 2 tbs of olive oil

    4. ½ cup of white wine 

    5. ½ or 1 tsp of red pepper flakes (this depends of how spicy you like it)

    6. Juice of 1 whole lemon and its zest

    7. ½ tsp of pepper

    8. ½ tsp of salt

    9. 1 cup of fresh arugula 

    10. 1 box of spaghetti 


    1. Cook the spaghetti following the instructions on the box.

    2. When finished drain the spaghetti and add in all the other ingredients. SUPER EASY!

  • Peach and Pear Cobbler :) Perfect for a summer day!


    1. 1 can of peaches

    2. ¼ cup of margarine (I used earth balance)

    3. 1 cup of sugar

    4. 1 tsp of baking powder

    5. 1/3 cup of oat milk

    6. 1/3 cup of applesauce

    7. ½ tsp of cinnamon 

    8. ¼ cup of brown sugar

    9. 1 tsp of vanilla 

    10. Pinch of nutmeg 

    11. 2 ripe pears

    12. 2 tbs of melted margarine

    13. 1/8 cup of oats


    1. Preheat the oven to 350 degrees and grease a baking dish. (I used a square 8 inch dish) 

    2. In a large mixing bowl, combine the flour, 2/3 cup of sugar, and baking powder, oat milk, and applesauce. This will create our yummy batter. Whisk until smooth. Should be the consistency of a pancake batter.

    3. Pour the batter at the bottom of the baking dish and do not stir it. This will give each serving a layer of fluffy cake at the bottom of each spoonful.

    4. Drain the peaches. In a large mixing bowl, mix together peaches, pears, 1/3 cup of sugar, nutmeg, vanilla, cinnamon. Put the mixture over the batter in the dish but do not stir. You want the batter to become fluffy at the bottom!

    5. Top the whole thing with the brown sugar, oats, and melted margarine. Then bake in the oven for 40-45 minutes. After that I put it on boil for about 2 minutes to create a crispy crust.

    6.  Enjoy!

    Serves 4-5 people.

  •  Sun-butter Whoopie Pies ! Vegan and nut-free! They are addictive :)



    1. 2 cups of flour 

    2. ½ cup cocoa powder 

    3. 1 tsp of baking soda 

    4. ½ tsp of salt

    5. ¾ cup of brown sugar

    6. ¾ cup of oat milk

    7. ½ cup of margarine 

    8. 1/3 cup of applesauce

    9. 1 tbs of vanilla extract 


    1.½ cup of margarine 

    2. ¾ cup of creamy sunbutter

    3. 1 ½ cup of powdered sugar

    4. 1 tsp of vanilla extract


    1. Preheat the oven to 375. In a large mixing bowl, combine the dry ingredients for the cookies (flour, coca powder, baking soda, salt, and brown sugar). Whisk together.

    2. Add in the wet ingredients- oat milk, margarine, applesauce, and vanilla). Combine until a dough its formed. 

    3.  Scoop about 1 tablespoon of dough into your hands. Form into a ball and then place on a parchments lined baking sheet. Each cookie should be at least 1 inch apart. Flatten them a little bit with fingers or the back of a spoon.

    4. Bake in the oven for about 10-12 minutes.

    5. When done remove from oven and let them cool for 5 minutes and them transfer them to a wire cooling rack. Let them cool completely. 

    6. Make filling in a large mixing bowl. Combine margarine, sunbutter, powder sugar, and vanilla. Mix with a rubber spatula or electric mixer until smooth. Set aside.

    7. When cookies are completely cool, put a spoonful of filling between two cookies. Do the same for all the cookies. Making  cookie sandwiches :)

  • Summer sky and apple pie!



    1. 2 and ½ cups flour

    2. 1 tsp of salt

    3. 1 tsp of sugar

    4. 1 cup of margarine

    5. ½ of cold water


    1. 7 medium apples

    2. ½ sugar

    3. ½ brown sugar

    4. 3 tbs of flour

    5. 1 tsp of cinnamon

    6. 1 tbs of lemon juice

    7. 1 tbs of margarine


    1. Pre-heat the oven to 375 degrees. Combining flour, salt, sugar, margarine, and water in a large mixing bowl. Knead dough until smooth and cut into two equal balls. Then roll them out with a rolling pin until about ¼ inch thick. Place one into a pie plate and trim off any excess dough on top. Set aside.

    2. Combine sugar, brown sugar, flour, and cinnamon in another mixing bowl. Mix with a whisk to evenly disperse the dry ingredients.

    3. Add the lemon juice and margarine

    4. Peel the 7 apples and cut into small pieces. Add to mixing bowl and mix together.

    5. Spoon mixture into the pie plate and cover it with the other rolled out dough. Pinch the excess up and roll it inward slightly to create a crust.

    6. Put in some air holes on top and then sprinkle sugar over the dough.

    7. Bake for 40- 45 minutes. The crust should be golden.

    8. Let cool and then enjoy!

  • Chickpea Salad :) 

    Perfect as a side dish for a summer meal. It is light and fresh!


    1. 2 tablespoons of olive oil

    2. 1 bag of frozen spinach 

    3. Zest of 1 lemon

    4. 1 tablespoon of fresh lemon juice.

    5. 2 tsp of crushed garlic.

    6. Dash of salt and pepper

    7. 1 can of chickpeas 

    8. 1 teaspoon of chopped parsley 


    1. Cook the frozen spinach following the directions on the package (you want it to be wilted).

    2. Drain the spinach and then put it in a large mixing bowl.

    3. Add the olive oil, garlic, chickpeas, lemon zest, and parsley. 

    4. Mix the salad together and then top with salt and pepper.

    5. Enjoy !

    This bread is bananas B-A-N-A-N-A-S


    1. ½ cup of sugar 

    2. ½ cup of earth balance margarine

    3. 1/3 cup of unsweetened applesauce  

    4. 2 ripe mashed bananas

    5. 1/3 cup of oat milk

    6. 1 tablespoon of vanilla extract

    7. 2 cups of flour

    8. 1 teaspoon of baking soda

    9. 1 teaspoon of cinnamon (you can do ½ tsp as well)

    10. ½ teaspoon of salt


    1. Pre-heat the oven to 350 degrees. Combine flour, baking soda, cinnamon, salt, and sugar in a large mixing bowl.

    2. Mash the 2 bananas in a small bowl and then transfer into the large dry ingredients bowl.

    3. Mix in the margarine, applesauce, oat milk, and vanilla.

    4. Pour batter into a bread pan that is oiled with either margarine or vegetable oil.

    5. Bake for 1 hour.

    6. Let it cool for 10 minutes.

    7. Enjoy!

  • Funfetti Marshmallows :)


    1. ¼ cup powdered sugar

    2. ¼ cup cornstarch

    3. ¾ cup water

    4. 1 tablespoon of vanilla extract

    5. 2 envelopes unflavored gelatin

    6. ¾ cup of sugar

    7. ½ honey (instead of corn syrup)

    8. 1/8 teaspoon of salt

    9. 2 drops of red food coloring


    1. Combine powdered sugar and corn starch. Coat a 8x8 baking dish with cooking oil and half of the sugar/ cornstarch mixture. 

    2. Combine ½ cup of water, vanilla, red food coloring, and sprinkle gelatin over the top.

    3. In a small saucepan, stir together honey, sugar, salt, and ¼  cup of water. Heat over medium heat until the mixture hits 240 F. Then remove from heat.

    4. Pour honey mixture over the gelatin mixture. Then beat with a mixer for 10 minutes, until fluffy and marshmallow-like.

    5.  Grease a spatula and scoop fluffy mixture into the coated baking dish. Flatten the top until smooth.

    6. Dust the top with the remaining sugar/ cornstarch mixture.

    7. Let set for 1 hour. 

    8. Cut up into cubes and enjoy!

  • Pizza Friday!



    1. 2 cups of flour

    2. 2 tsp of baking powder

    3. 1 tsp of salt

    4. 1 cup of water

    5. 2 tbs of olive oil


    1. ¾ tomato puree (add 1 tablespoon of tomato paste if you like a thicker sauce)

    2. ¼ tsp of onion salt

    3. ½ tsp of Italian seasoning (basil, rosemary, oregano, thyme)

    4. ½ tsp of garlic powder


    1. Mix the dough ingredients until combined.

    2. Sprinkle a surface with flour and roll out the dough into a circle.

    3. Turn up the edges of the dough to make a crust.

    4. Rub a sprinkle of olive oil over the entire dough.

    5. Mix the sauce and pour evenly over the dough. 

    6. Top with “casein free” pepperoni (I use Applegate “Uncured Pork & Beef Pepperoni”). 

    7. Preheat the oven to 400 degrees.

    8. Bake for 20 minutes or until the crust is golden :)

    9. Enjoy!
