    Pumpkin Pasta 😁


    1. 2 lbs of chicken

    2. 3 tbs of olive oil

    3. Small box of mushrooms

    4. 1 tsp of garlic powder

    5. Dash of salt and pepper

    6. 1 box of pasta


    1. 1 (15) oz can of pumpkin purée

    2. 1 and ½ cup oat milk

    3. ½ tsp salt and pepper

    4. 1 tsp garlic powder

    5. ¼ tsp of red pepper flakes

    6. ½ tsp of thyme leaves

    7. 3 tbs of margarine

    8. 1/3 cup of flour

    9. 1 cup of fresh spinach


    1. In a frying pan, cook 2 lbs of chicken in cut up into 1 inches in 2 tbs of olive oil.

    2. In another frying pan, cook the mushrooms in 1 tbs olive oil, 1 tsp of garlic powder and a dash salt and pepper. Let them lightly brown.

    3. Cook pasta according to box instructions. Drain and set aside when done.

    4. In a sauce pan combine pumpkin purée, oat milk, salt/pepper, garlic powder,red pepper flakes, thyme leaves, margarine, and flour. Whisk the whole thing together until smooth. Let the sauce thicken over medium heat. Stir frequently.

    5. When the sauce has thickened add in the spinach leaves and stir them into the sauce. Wait until the leaves wilt then remove from heat.

    6. Pour the sauce over the pasta. Add in the chicken and mushrooms. Then combine until the whole pot is evenly coated. Then serve!

    Holiday Sugar Cookies❄️🎄


    1. 3 cups flour

    2. 1 cup sugar

    3. 1 tbs vanilla

    3. 1/3 unsweetened applesauce

    4. 1 ½ tsp baking powder

    5. 1 cup earth balance margarine

    6. powdered sugar


    1. Preheat the oven to 350 degrees and line two baking sheets with parchment paper.

    2. In a large mixing bowl combine flour, baking powder, and sugar. Then add the margarine, vanilla, and applesauce. Mix until smooth dough is formed. I do this by hand with a plastic spatula.

    3. Roll out the dough on a surface dusted with powdered sugar and cut out your shapes. I made Christmas trees and snowflakes!

    4. Carefully place the cookies on baking sheet and bake for 10-12 minutes. Until the bottoms are light brown. Remove from the oven and let them cool completely on a wire rack before you decorate!

    Pumpkin Bread 🍞 (or better named- life is gourd bread 😂)


    1. 1 ½ cups flour

    2. ½ cup sugar

    3. ½ cup light brown sugar

    4. ¼ cup apple sauce

    5. 2 tsp baking powder

    6. 1 tsp baking soda

    7. 1 tsp cinnamon

    8. 1/8 tsp nutmeg

    9. 1 tbs vanilla extract

    10. ½ cup oat milk

    11. 1/3 cup margarine

    12. 15 oz can of pumpkin purée


    1. Preheat the oven to 350. Grease a loaf pan.

    2. In a large mixing bowl combine flour, sugar, cinnamon, nutmeg, baking soda, baking powder, and brown sugar. Whisk together.

    3. Add pumpkin purée, margarine, oat milk, vanilla, and apple sauce. Whisk until smooth. Then pour into the loaf pan and bake for 60 minutes or until a toothpick comes out clean.

    Peach balsamic chicken 🍑


    1. 2 tbs of olive oil

    2. 1 package chicken breast

    3. 2 tbs of margarine

    4. 1 tbs of honey

    5. ½ tsp of salt

    6. ½ tsp of pepper

    7. 1 tsp onion powder

    8. 1 tsp herbs de provence

    9. 1/3 cup of balsamic vinegar

    10. 1 cup chicken stock

    11. ¼ cup basil leaves

    12. 3 cloves of garlic minced

    13. 4 ripe peaches ( if not in season use canned peaches)


    1. In a large frying pan lightly brown chicken breast in two tbs of olive oil.

    2. Peel the peaches and slice. Set aside.

    3. Add to the frying pan the chicken stock, basil leaves, garlic, balsamic vinegar, herbs de provence, onion powder, salt, pepper, honey, margarine, and peaches.

    4. Let the whole thing simmer for 14 minutes on low heat.

    Dairy-free Swedish Meatballs 🙌🏻😁



    1. 1.5 lbs ground beef

    2. 2 tbs of olive oil

    3. ½ tsp salt

    4. ½ tsp pepper

    5. 1/3 unsweetened applesauce

    6. 1 tsp onion powder

    7. 1 tsp garlic powder

    8. ¼ tsp nutmeg

    9. ¼ tsp of all spice

    10. 1 tbs fresh parsley

    11. 1 tbs margarine

    12. ½ cup plain breadcrumbs

    13. 1 cup oat milk


    1. ¼ tsp salt

    2. ½ tsp pepper

    3. 1 tbs fresh parsley

    4. 1 tsp minced garlic

    5. ½ cup of all purpose flour

    6. 1 tsp mustard powder

    7. 3 tbs margarine

    8. 2 cups oat milk

    9. 2 cups beef broth


    1. In a deep frying pan heat up the two tbs of olive oil.

    2. In a large mixing bowl combine beef, salt, pepper, applesauce, onion powder, garlic powder, nutmeg, allspice, parsley, margarine, breadcrumbs, and oat milk.

    3. Roll meat mixture into meatballs and place on the frying pan. Should make about 20-22 meatballs. Brown the outsides of the meatballs in the pan with olive oil. Keep rotating them until all sides are browned over medium heat ( flipping with a spoon it makes it easier).

    4. Once they are browned on the outside, then bake at 400 degrees for 25- 30 minutes.

    5. To make the sauce, in a large sauce pan combine salt, pepper, parsley, garlic, flour, mustard powder, margarine, oat milk, and beef broth.

    6. Whisk until smooth then whisk often while cooking. Bring to a light boil then let simmer until it thickens on medium/low heat. Allowing it to simmer will make thicken. We don’t want to lose the light boil.

    7. Once the sauce has thickened, pour it over the meatballs and serve!

    Autumnal harvest casserole 🥘 🍁


    1. 2 packages of thin sliced chicken breast

    2. 1-2 tbs of olive oil

    3. 1/3 cup plain bread crumbs

    4. 1 cup of uncooked rizzolto

    5. 1 cup frozen peas

    6. 1 cup sliced baby carrots

    7. 1 tsp salt

    8. ½ tsp pepper

    9. 1 tsp herbs de Provence

    10. 1 tsp minced garlic

    11. 1 tsp onion powder

    12. 3 tbs margarine

    13. ¼ cup white cooking wine

    14. 2 cups light in sodium butternut squash creamy soup ( I used “organic imagine light in sodium butternut squash soup” )

    15. 1 cup oat milk

    16. ¼ cup all purpose flour


    1. Preheat the oven to 425 degrees. Cut up the chicken into 1 inch pieces and cook in a frying pan with 1-2 tbs of olive oil until fully cooked. Set aside.

    2. Slice carrots and set aside.

    3. In a large mixing bowl combine rizzolto, peas, carrots, salt, pepper, herbs de Provence, garlic, onion powder, margarine, white cooking wine, butternut soup, oat milk, and flour. Mix together with a spoon. Then add in the chicken pieces. Mix again.

    4. Pour into a greased casserole dish and bake with the lid on for 35 minutes. I put a sheet pan under it just in case of overflow.

    5. After 35 minutes, take the lid off and sprinkle 1/3 cup of plain bread crumbs all over the top of the casserole then put the casserole back in the oven for 25 minutes with the lid off. This will create a nice crust.

    6. Put under broiler for 2 minutes. Then serve!!!

    Chicken soup for the soul 😊


    1. 6 large carrots

    2. 1 rotisserie chicken

    3. 5 cups chicken stock

    4. 5 cups chicken broth

    5. 1 tbs onion powder

    6. 1 tsp of minced garlic

    7. ½ tsp of Italian seasoning

    8. 5 sprigs of fresh thyme

    9. 1 tbs of fresh parsley

    10. ½ tsp pepper

    11. ½ tsp salt

    12. 1 bay leaf

    13. 1 tbs margarine

    14. 1 box of pasta


    1. Peel the carrots and then cut them into ½ inch pieces. Boil them in a sauce pot until they are fork tender. Then drain and set aside.

    2. Shred a rotisserie chicken then set it aside.

    3. Boil the pasta.

    4. In a deep pot combine broth, stock, margarine,salt, pepper, thyme, bay leaf, Italian seasoning, garlic, onion powder, and parsley. Whisk together and simmer over medium heat for 10 minutes.

    5. Add the pasta, carrots, and chicken. Simmer on low heat for another 10 minutes.

    5. Remove the bay leaf and serve.

    Rosemary and Apple Baked Chicken 🍎


    1. 2 lbs of chicken breast

    2. 1 tbs minced garlic

    3. ½ tsp powdered thyme

    4. 1 tbs rosemerry

    5. 2 tbs of olive oil

    6. ½ tbs salt and ½ tsp pepper

    7. ¼ cup apple cider vinegar

    8. ¼ cup white cooking wine

    9. ½ cup chicken broth

    10. 5 medium apples

    11. Honey


    1. Preheat the oven to 375. And oil a baking sheet.

    2. In a large mixing bowl combine garlic, salt, pepper, vinegar, cooking wine, chicken broth, rosemary, olive oil, and thyme. Whisk together.

    3. Dip the chicken breast into the mixture 1 at a time and then place them on the baking sheet. Save the left over mixture!

    4. Peel and cut up 5 apples. Put them onto the baking sheet with the chicken. Pour the left over seasoned mixture over everything on the baking sheet. Then drizzle the whole thing with a little honey.

    5. Bake at 375 for 1 hour and then serve.

    Always look on the bright cider of life! Apple Cider Donuts 🍎



    1. 1 ½ cups of apple cider

    2. 1/3 cup unsweetened apple sauce

    3. ½ cup of dark brown sugar

    4. ¼ white sugar

    5. 1 tbs of vanilla extract

    6. 1 tsp cinnamon

    7. 1 tsp of baking powder

    8. ½ tsp of baking soda

    9. 3 cups flour

    10. ¼ tsp nutmeg

    11. 3 tbs melted margarine (soy free earth balance)

    12. 1/3 cup oat milk


    1. 10 tbs melted margarine

    2. 1 cup light brown sugar or white sugar

    3. 1 tsp cinnamon


    1. Heat up an electric mini donut iron and coat with canola oil. (You could also do this recipe in the oven. Just bake at 350 until toothpick comes out clean).

    2. In a large mixing bowl, combine all of the batter. Mix until smooth.

    3. Spoon the batter into the donut iron (you want to fill the mold but don’t go over the top of the mold or it will be MESSY).

    4. Close the iron and let bake for about 5 minutes. They should be sponge-like and a toothpick should come out clean.

    5. Remove donuts from the iron carefully. Use a fork to pop the donut out of the mold. Between batches always coat the iron with more oil. This will keep the donuts from sticking to the iron. When done put donuts on a cooling rack.

    6. In a small bowl, pour in 10 tbs if melted margarine.

    7. In another small bowl, combine sugar and cinnamon for coating.

    8. Take a brush and coat the donuts completely with the melted margarine. Then dip in the cinnamon sugar mixture. Press the coating onto the donut.

    9. Enjoy!

    Sugar-free caramelized sweet potatoes 🍠


    1. 4 sweet potatoes

    2. 3 tbs of olive oil

    3. 3 tbs monk fruit sweetener

    4. 1 tbs of cinnamon


    1. Peel potatoes and cut into cubes. Put in a large frying pan.

    2. Add oil, cinnamon, and monk fruit sweetener.

    3. Mix with a spatula to coat all the potatoes.

    4. Cover with a lid.

    5. Cook over medium heat for 20 minutes or until fork tender and flip with a spatula every five minutes.

    6. Enjoy!

    Chicken Bacon Ranch Pasta 🤩


    1. 2 lbs of chicken

    2. 2 tbs of olive oil

    3. 16 oz box of Penne

    4. 1 tbs of minced garlic

    5. 1 tsp of onion powder

    6. 1 cup of oat milk

    7. 1 tbs of margarine

    8. ½ tsp salt

    9. ½ tsp pepper

    10. 8 pieces of cooked bacon chopped into ½ inch pieces

    11. ½ cup of daiya ranch

    12. 8 oz jar of sundried tomatoes

    13. 1 tsp fresh parsley

    14. 1 cup of follow your heart shredded parm


    1. Cut chicken into 1 inch pieces. In a large frying pan, brown the chicken in the olive oil over medium heat.

    2. Boil pasta following the directions on the box. Set aside.

    3. In a large pot combine follow your heart parm, parsley, sun dried tomatoes, daiya ranch, minced garlic, onion powder, bacon, salt, pepper, oat milk, and margarine.

    4. Let the sauce thicken over low heat. The follow your heart shredded parm such be completely melted.

    5. Add pasta and chicken. Mix to combine and coat all of the pasta.

    Cookie Batter Rice Pudding 🍪🍚


    1. 1 cup white rice

    2. 4 cups oat milk

    3. 5 tbs of margarine

    4. ½ cup brown sugar

    5. 1 teaspoon cinnamon

    6. 1 tbs vanilla extract

    7. 1 tbs of corn starch


    1. In a sauce pot over low heat, combine rice, 2 cups oat milk, margarine, brown sugar, vanilla, and cinnamon.

    2. Stir frequently for about 15 minutes! Once the first 2 cups of oat meal is mostly absorbed, add in the other two cups of oat milk.

    3. Continue stirring continuously for about 25 more minutes. Add the cornstarch. Whisk it quickly until absorbed.

    4. Keep cooking on low heat for another 20 minutes. Until the pudding is thick and soft. Stir frequently to prevent it sticking to the bottom of the pot!

    5. Serve warm or cold and top with cinnamon or jam whatever you like 😁.

    Glazed Carrots 🥕


    1. 1 pound of muti-colored carrots

    2. 2 tbs of margarine

    3. ½ of salt and pepper

    4. ½ tsp of powdered thyme

    5. 1/8 cup of monk fruit sweetener golden raw cane sugar replacement

    6. 2 tbs of orange juice

    7. 1 ½ tbs of honey

    8. 1 tsp of minced garlic


    1. Wash and peel carrots. Set aside.

    2. In a frying pan combine margarine, salt/pepper, thyme, monk fruit, orange juice, honey, and garlic over medium heat.

    3. Add carrots and cook for 15 minutes or until carrots are fork tender.

    4. Serve and top with sauce.

    Maple Cookies 🤩🍁



    1. 3 cups of flour

    2. 2 tsp baking powder

    3. 1 cup of margarine

    4. ½ tsp salt

    5. 1 tbs vanilla extract

    6. 1 cup brown sugar

    7. 1 tsp cinnamon

    8. 1/3 cup applesauce

    9. 1/3 cup and 1 tbs pure maple syrup


    1. 1 cup powdered sugar

    2. 1/3 cup maple syrup

    3. gold sprinkles


    1. Preheat the oven to 350 and line two baking sheets with parchment paper.

    2. In a large mixing bowl, combine the dough dry ingredients- flour, baking powder, cinnamon, salt, and brown sugar.

    3. Then mix in the vanilla, applesauce, maple syrup, and margarine. Mix until smooth dough is foamed.

    4. Roll dough into 1 inch balls and place on the baking sheets. Press them down lightly with three fingers to flatten them a tiny bit.

    5. Bake for 10-12 minutes or until the bottoms are light brown. Let them cool 5 minutes and then move them to a cooling rack until fully cooled.

    6. Prepare the icing drizzle. In a mixing bowl, combine powdered sugar and maple syrup. Whisk together.

    7. Drizzle the icing on the cookies and immediately top with the gold sprinkles so that they stick to the icing.

    8. Makes 24 cookies. Enjoy!

    Loaded Potato Soup🍲 🥔


    1. 4 Russett potatoes

    2. 2 heads of fresh broccoli

    3. 4 cups of chicken broth

    4. 1 tbs of onion powder

    5. 2 tsp minced garlic

    6. 4 large carrots shredded

    7. 2 cups of chopped cooked bacon

    8. 4 cups of extra creamy oat milk

    9. 5 tbs of margarine

    10. 3 cups of shredded vegan cheddar cheese

    11. 5 sprigs of fresh thyme

    12. ½ cup of flour

    13. 1 tsp of salt

    14. ½ tsp of pepper

    15. 1 tbs of fresh parsley


    1. Peel and dice the potatoes. In a large pot, boil the potatoes until fork tender and then drain.

    2. Mash the potatoes and set aside.

    3. Boil 2 heads of fresh chopped broccoli until softened about 15 minutes. Set aside.

    4. In a deep pot, combine broth, onion powder, garlic, carrots, bacon, oat milk, margarine, vegan cheese, thyme, flour, salt, pepper, and parsley. Whisk and then stir frequently.

    5. Add the mashed potatoes into the soup. Stir. Let the soup cook on medium heat for 15 minutes and then serve.

    6. Enjoy!

    Pretzel Chicken Bites 🥨🙌🏻


    1. 1 cup of flour

    2. ½ tsp salt

    3. ½ tsp pepper

    4. 1 tsp mustard powder

    5. 1 cup oat milk

    6. 1/3 applesauce

    7. 5 cups of Snyder’s snap pretzels (that’s the brand I used but any type of pretzels would work great!)


    1. Put Snyder’s snap pretzels in a plastic bag and zip it shut. Take a rolling pin and roll over the pretzels until they are all crushed and small enough to act as bread crumbs. You don’t want complete powder-just small pieces. Pour into a large bowl and set aside.

    2. In another large bowl, combine flour, salt, pepper, and mustard powder. Set aside.

    3. In a smaller bowl, combine the oat milk and applesauce. Set aside.

    4. Cut up 2 lbs of chicken breast into 1 inch pieces.

    5. Toss the chicken pieces in the flour mixture then oat milk mixture and finally the pretzel bowl. Press the pretzels crumbs on the chicken.

    6. When they are all finished put the bites in the air fryer on 375 for about 15 minutes you might have to do a couple of batches depending on the size of your air fryer. Make sure you spray the air fryer basket and the chicken bites with oil before cooking.

    7. Enjoy!
