Cookbook is a hit! LG got her a book with pics and the first recipe she picked was a soup - of course. None of us had really made gazpacho, but it was zippy and fairly easy (except for the steaining) and really lovely.

This week’s recipe (week 28):
A chunky Italian style tomato soup in which you can use different veg and leftover pasta or rice. Besides the onion/garlic base, I used carrot, zucchini and fennel. I think celery would also be good. It’s a very simple tomato soup recipe with add-ins (creamy cannelini beans!👌🏼) but the chili paste and tbsp of red vinegar make it surprisingly flavourful.
Would I make this again? Yes, I think so! I am usually more fond of blended soups but this was a nice change. It is an easy way to use up leftover vegetables and pasta sauce and also a good way to get more beans into hubby. 😊
if you use a teaspoon to drink a cup of tea, does it count as a soup?
