You deserve a crown
As soon as there is a wisp of the holidays in the air, like say early December, the oven turns on and the baking starts in earnest in my house. Inevitably there are a few egg whites left over and of course, I commandeer them.
The classic Whisky Sour is made just a little more delicious with the addition of this very versatile ingredient. Plus it makes what can be a quite strong cocktail (3 parts Whisky maybe), into a very innocent looking “frou-frou” drink.
Tom and Jerry…America’s forgotten Christmas cocktail.
As the story goes, it was either British journalist Pierce Egan or legendary bartending founding father, “Professor” Jerry Thomas, who invented the drink. The difference between the two was milk and water.
6 large eggs
½ tsp ground nutmeg
½ tsp ground cloves
½ tsp cinnamon
½ tsp allspice
2 tsp vanilla bean paste
1 tsp cream of tartar
1 lb organic dried cane syrup (available at Target)
1 oz Spiced rum, bourbon, or Scotch
1 oz cognac, or brandy
Hot whole milk
Boiling water to warm your mug
Tom and Jerry batter
Separate the eggs, placing the egg whites in one mixing bowl, and the yolks in a separate mixing bowl.
In the bowl with the egg whites add the cream of tartar. Beat until they form stiff peaks.
In the bowl with the yolks beat together the vanilla bean paste, cinnamon, allspice, cloves, and nutmeg. Slowly mix in the sugar. When the mixture is completely liquid, fold it into the whites.
Rinse a coffee mug with boiling water to warm it and then discard the water. If you have a ceramic Tom and Jerry cup even better! Add one tbsp of the batter and 2 oz (1 oz bourbon, whiskey, or scotch and 1 oz cognac or brandy) of the liquor of your choice to the mug. Fill with hot milk, stir vigorously until well blended or the batter will curdle.
